Locally Sourced Sustainable Ingredients and The Conscientious Carnivore
At Trigony, we believe it is vital to use the very best quality ingredients and to source our meat as sustainably as possible. Using ethical suppliers. we are able to feature a variety of delicious meats including our organic Peelham Farm beef, free range rare breed pork and locally sourced wild venison. We also include a wide range of dishes which cater for both our vegetarian and vegan guests- with almost half of our menu being for vegetarians!
Chicken; Our free range chicken, locally farmed in Strathaven from St Brides Farm. They take nearly twice as long to mature as the average organic chicken!
Beef; We are also proud of our Organic Peelham Farm beef, which is 100% grass reared throughout the entire year. This beef produces a wonderfully tasty steak with a great texture, differing immensely to that of usual farmed beef.
Wild venison; Perhaps most delicious & sustainable of all, is our local wild venison. Sourced from the Southern Uplands and the Galloway Forest, it doesn’t come more sustainable- and it certainly couldn’t be more delicious. With human beings being the only natural predator to the wild deer, culling is vital in keeping their environment healthy, and maintaining a manageable deer population. At Trigony, we use fallow, roe and red deer, all of which make a totally delicious alternative to lamb & beef.
Mutton; We are great fans of mutton too, and frequently feature this often ignored meat on our menu. With a longer period to mature than lamb, our mutton is tender and delicious with a slightly more intense taste.
With sustainability being at the forefront of what we do, we also take great care in sourcing our fish. We no longer use farmed salmon due to its negative impact on the environment, instead opting for locally farmed trout, fresh from the ponds in Dumfriesshire.
As an alternative to smoked salmon, we use Scottish farmed smoked halibut, which is far more ethically farmed, and less damaging to the environment. Additionally, we only use line caught mackerel & hake as well as Solway crab & Shetland mussels.
We grow much of our own fruit & herbs in our small walled garden, and we love preparing vegetarian and vegan dishes with this wonderfully fresh produce.
